Color Garden colors are purest at a neutral pH level. Reds are the most red and blues are at their bluest when the icing is pH neutral (neither acidic nor alkaline). So an icing with a neutral pH works best. Sometimes when you make an icing, there are different types of emulsifiers available. The most common emulsifier is liquid egg whites. But egg whites create challenges when mixed with natural colors.

 

When you add liquid egg whites (or a whole egg for that matter) to an icing, you raise the pH level and thus make the icing more alkaline. Color Garden natural colors don’t look their best in an alkaline environment. Greens become grayish and blues look greenish. A high pH even makes yellow look orange-ish. As an alternative to liquid egg whites, try using soy or sunflower lecithin. You could also mix milk with light corn syrup. For this alternative use a ratio of 2 teaspoons light corn syrup to 1 tablespoon of milk.
